Easy Cobb Salad

The holidays are over and my resolutions started on February 1st. (disclaimer: I started somewhat earlier than that date- but I went ALL in on the 1st of February).  Son of a [big] gun.......

This year, I said to myself "just enjoy the first few weeks". I did. I have. I have felt elated by doing just that. The pressure was so minimal and the stress was non-existent. I lived in my yoga pants. I lived in my boyfriend's t-shirts, I had days off in which I didn't take off my Pj's all day- and ordered food delivery from all my favorite places. I totally opted to wait to start my healthy eating regime until February 1st. It felt so good to do that.  To just wait. To enjoy. To not stress like most people who opt for a January 1st date. 

Does this sound like you? [you] are usually am blazing through the day that by lunchtime, there is literally no time to stop and eat something that has all the components of a healthy and a balanced meal (protein, fat, and healthy veggies). Do you tend to chug that coffee early morning, run out the door and grab a fruit thinking that you are doing yourself justice? If so, then it's time to  make this easy salad and fuel yourself differently.

I tend to build this salad on Sundays while making dinner. I pack it up into portion containers and that seems to ensure that if I run out of time mid-day, at least I will have a great salad to help move the needle a bit. My go-to salad? It's the Cobb Salad.

Do you know why the Cobb Salad is the most versatile salad? According to Wikipedia, The Cobb salad is a main dish American garden salad made from chopped salad greens, tomato, crisp bacon, boiled, grilled or roasted chicken breast, hard-boiled egg, avocado, chives, Roquefort cheese, and red-wine vinaigrette. Wikipedia. I love that description. To me, it has elements of rounded flavors that hit all those taste buds in your mouth. The sweet, the salty, the sour, and the bitter. 

I love the crunch of Cabbage, the crisp of the Greens, the texture of the Eggs, the umami of the Bacon, the brightness of the citrus dressing. I truly love making this salad and I do hope that it becomes one of your favorite things to make.

As you can see, I don’t line up the ingredients like the traditionalists do. I like to live on the edge and mix it up. Like LITERALLY mix it up. So I toss all my ingredients in a bowl. I like to make my life easy, and you should too. So go for it- make it this way. Have yourself and easy week.

Ingredients (serves 4)

½ head cabbage (shredded)

4 c greens (I like using a combo of kale, spinach, and arugula)

1/3 c bacon (cooked and broken into pieces)

4 eggs (hard boiled, peeled and crumbled)

Citrus Dressing

1/3 c Apple Cider Vinegar

½ C Olive Oil

1 whole orange (juice and zest)

2 tsp Honey

Salt and Pepper to taste

(Add all ingredients to Mason jar, close the lid and shake- will keep one month in fridge)

Preparation

1.       All ingredients into a bowl and toss with ¼ c of dressing.

2.       Season with salt and pepper.

3.       Enjoy.
