Breakfast 3 Ways

I recently spent the day with Karla, a landscape photographer who doesn't know how to cook.

She sure can shoot pictures right? 

Karla is off to London for a month living in a place with a kitchenette and she wanted to learn how to make breakfast. So we had a private lesson. 

I spent the morning teaching her basic eggs concepts.  

Why eggs

When I spoke to her at our initial inquiry call, she told me that she "loves eggs yet not too confident in making them and wanted to cook breakfast each morning while traveling". I wanted to remove that fear from her and show how simplistic and variable an egg dish can be.

We made 3 kinds of eggs. Sunny Side Up, Scrambled and Poached. Each one of them are so easy to make, she found. We also made a hash so that she can have with a lunch menu. 

I love making hash. So we started with that. Karla told me potatoes are big staple of hers. I wanted to show her how to properly cook the potatoes (my tip: Heat skillet  to medium heat 1st, then add 1 tbsp of oil, your cubed potatoes,1 tsp of pepper and salt and cover at medium heat for 5-7 minutes- this lets them steam a bit and soften. Then uncover to crisp for the next 10 minutes max).
